8 Lemons (to render 1 1/4 cups of lemon juice)
1 cup of Sugar
1/2 cup of Water
8 cups of filtered water
Make simple syrup
To make simple syrup, combine 1/2 cup of water with 1 cup of sugar in a small saucepan. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature and then refrigerate.
Use a citrus juicer, NOT a juice machine to juice approximately 8 lemons to acquire 1 1/4 cups of lemon juice. Leave in the pulp, or strain, depending on your tasting audience. In a pitcher, stir together chilled syrup, lemon juice and remaining 8 cups of filtered water.
